There are different theories, and here are the biggest ones.
1 – To sanitize the bottle neck with the citric acid,
2 – To keep flies out of it, assuming that's a real concern,
3 – To wipe rust that may have formed from the cap,
4 – To take away that famous, skunky beer taste.
Limes are everywhere in most of Mexico, so it's an easy, usually free addition most people like. Why do people put hot sauce on burritos, salt on tortillas, or dip in guacamole? Mexicans will add lime to just about anything, food and beverage alike. Better question is why they put a worm in the tequila.
